Reminds me of home…The Pinakbet is surely authentic!The memories of my Ilocano roots were rekindled once I tasted the fish bagoong infused vegetables! My childhood vacations in Ilocos Sur came rushing back….
Most Pinakbet dishes here in New York use “alamang” as flavoring which is not OG pakbet for me plus they add Squash which is not common for this Ilocano. In Binondo, they use Kamote instead of squash which added a more pleasant sensation to my tastebuds! Buridibud-ish!
